Brown Rice Breakfast Pudding

I don’t know about you but whenever we try to eat healthier there can always be push back from the kids and with 6 people living under one roof everyone has their likes and dislikes. We took the original recipe from Forks Over Knives and you can find it here. My girls told me that they didn’t like dates so we made some modifications so it was something they enjoyed yet was still healthy!

Ingredients

  • 1 cup Quick Cook brown rice 
  • 2 cups unsweetened almond milk
  • 1 tsp ground cinnamon
  • ⅛ to ¼ teaspoon ground cloves, to taste 
  • 1 cup unsweetened applesauce
  • 1 tart apple (such as Granny Smith), cored and chopped 
  • ¼ cup raisins
  • Salt to taste
  • ¼ cup slivered almonds, toasted, garnish
  • honey to taste
  1. Combine brown rice and almond milk and bring to a simmer. It may take 30-45 minutes for this to fully cook.
  2. About 5 minutes from the end of cooking add the remaining ingredients and stir to combine.
